Kuehneromyces mutabilis
A traditional edible mushroom that has always been valued for its abundant harvest, strong aroma and tender flesh. In natural conditions, it appears in June and disappears by the end of August, justifying its name. The cap is 4-6 cm in diameter, semicircular when young, later flat-convex with a protruding tubercle in the center. The color is rusty-brown-brown, with concentric, lighter stripes. The flesh is white, watery, quite thin. The stem is cylindrical, slightly narrowed at the bottom, sometimes with a ring. Before eating, it is recommended to boil the honey mushrooms and drain the broth. Then the mushrooms can be fried, salted, marinated, added to soups. Dried mushrooms do not need to be boiled.
