Pumpkin of the "Hokkaido" variety is a type of portioned Japanese pumpkin.
Mid-late, 90-100 days, sweetish, chestnut-nutty taste. This pumpkin feels great in Estonia, where it is grown using conventional technology. Fruits in technical ripeness are dark green with white longitudinal stripes, and as they ripen, their color changes to red-orange.
This pumpkin is known in Japan as Kabocha - translated from Japanese - "pumpkin". In France, they call it "Potimarron", formed from 2 words: "Potiron" (pumpkin in French) and "Marron" (chestnut), because the taste resembles a chestnut.
Fruits can be stored for up to 6 months in a dry room.

Thanks to beer, one of its main ingredients, the soup has a slightly noticeable and pleasant bread flavor. Kürbis soup is especially popular with Bavarians, perhaps because it is prepared with beer - one of the main ingredients of this dish.
Preparation of kürbis soup begins with a Hokkaido pumpkin (1 kg). It should be divided into quarters and the seeds should be removed from each piece. Every single one, because bitterness can spoil the whole taste of this dish.
Next, cut the pumpkin quarters into smaller cubes. Peel two onions (shallots) and chop them finely. Pour a little oil into a saucepan and sauté our vegetables a little, adding honey and spices to your taste. You must immediately add salt and cayenne pepper so that it also fries with the vegetables for flavor. Add beer (250-350 ml) here. Now cook for exactly as long as it takes for all the beer to evaporate and only a little broth to remain. When the beer has evaporated, you can pour in milk (150 ml) and cream (150 ml). Then cook for thirty minutes until the pumpkin softens, and then the soup only needs to be pureed. Well, then use a blender. That's it - the pumpkin soup is ready. Beer gives it a slightly elusive and very pleasant bread flavor. Pumpkin, onion - it would seem, simple peasant products, but at the same time the dish turns out to be very sophisticated.
