* The bitter taste of lettuce is due to the presence of a specific substance lactucin. In watercress, glucoside tropeolin was found, which contains bound sulfur and determines the characteristic taste and aroma of the vegetable. Rubber has been found in the milky juice of lettuce. Lettuce is very rich in minerals, with a total ash content ranging from 7 to 19% on a dry matter basis. The highest percentage in it is potassium, there is calcium, phosphorus, magnesium. The ash contains trace elements: iron, aluminum, titanium, manganese, barium, strontium, boron, bromine, molybdenum, zinc, uranium and others, the amount of which is largely due to the content of these elements in the soil.
