Medium sized plant. The head is rounded, dense.
Self-closing leaves provide white heads. The taste qualities are excellent.
Recommended for fresh consumption and freezing.

Cod with cauliflower (Cretan recipe).
Ingredients:
1 kg salted cod, 1 kg cauliflower, 1/2 cup olive oil, 2 tablespoons tomato paste, 2 onions, 1 glass red wine, salt, pepper.
Preparation.
Cut the fish and remove excess salt.
Fry the onion, then add 1/2 cup water, salt, pepper and the cauliflower, cut into large pieces.
Cook for another 10-12 minutes.
Carefully add the fish pieces and cook for another 15 minutes, shaking the pan occasionally (do not use a slotted spoon to avoid damaging the pieces).
