In France, spinach is called the "king of vegetables" and is grown everywhere. The witty French, with their inherent sense of humour, nicknamed spinach the "broom of the stomach". It excites the activity of the pancreas and stimulates the intestines.
Spinach is valued for the high protein content in its leaves. Among vegetables, only immature peas and beans contain more protein than spinach.
In addition, it has been established that regular consumption of spinach leaves inhibits the development of malignant tumours. Therefore, recently this vegetable has been used in the treatment of radiation sickness.
Spinach leaves contain vitamins, carbohydrates, carotenoids, saponins, flavonoids, organic acids, mineral salts (iron, phosphorus, magnesium, potassium, sodium, and calcium), and a significant amount of iodine.
It is used in children's dietetic nutrition, for anemia, hypertension, diabetes mellitus, tuberculosis, nervous system diseases, hypoacid gastritis, enterocolitis, constipation and flatulence, for the prevention of periodontal disease, growth disorders in children, as well as during high mental and physical loads.
In folk medicine, a water infusion of the herb and leaves is drunk for anemia, constipation, accumulation of gas, for various neurotic conditions, laryngitis, laryngopharyngitis, bronchitis, pneumonia, and as a remedy for scurvy, as a therapeutic agent that stimulates the activity of the gastric mucosa and pancreas.
! However, the consumption of spinach requires compliance with certain precautions, especially when feeding infants and young children.
It must be remembered that when storing spinach food for 24-48 hours in a warm room, under the influence of bacteria, the formation of nitrite salts occurs. These salts are poisonous, since, absorbed into the blood, they lead to the formation of methemoglobin and thereby exclude a significant part of red blood cells from the respiration process. Cyanosis (blueness) may appear, then shortness of breath, vomiting, diarrhea, chocolate-brown colouring of the blood, and in severe cases - collapse.
! Spinach is contraindicated in medical nutrition for people with impaired water-salt metabolism, gout, liver and kidney diseases.
• 10 g of spinach leaves per 1 cup of water, boil for 6-7 minutes, strain after cooling. Take 1/4 cup 3-4 times a day before meals for gas accumulation in the intestines.
The same decoction is recommended in all cases where dietetic nutrition with spinach is indicated.
