Cretan Kolokifokorfades (tender stewed pumpkin stem tops).
- 1 kg kolokifokorfades (tops of pumpkin stems)
- a little amaranth
- 3-4 small zucchini
- 2 onions
- 2-3 cloves of garlic
- 3 ripe tomatoes
- 1/2 cup olive oil
- salt and pepper to taste.
In a saucepan with oil, fry the onions and garlic, then add the stem tops, amaranth and vegetables and let them sauté.
When the vegetables become soft, add grated tomatoes, salt, pepper and reduce heat. Let the dish simmer slowly until the juices release.
