Its pulp contains many easily digestible polysaccharides, vitamins, minerals, organic acids, contrary to the popular belief that it contains nothing but sugar and water. You can make honey, molasses, jam, wine, pastilles and candied fruits from watermelon, and most of these preparations can be made without adding sugar.

Cooking method:
1. To make honey, take a well-ripened watermelon with sweet pulp. Wash, cut into slices and remove the pulp with a spoon or spatula. Remove the seeds, and rub the pulp through a sieve or mince.
2. Strain the juice from the pulp through a double layer of gauze, put on the fire and bring to a boil, remove the foam.
3. Pass the juice again through a fine sieve or gauze, put on low heat and boil off excess moisture, stirring constantly so that the mass does not burn.
4. When the volume decreases by about 5 times, check the readiness of the honey, for which you need to drop it on a cold plate. If the drop does not spread, the honey is ready.
5. After this, pour the honey into sterile jars and cover with lids or parchment.
