A perennial heat-loving plant with a height of 90-110 cm, in Estonia it is grown as an annual seedling crop. The period from full germination to technical ripeness is 160-165 days.
Artichoke is a dietary product and delicacy; fleshy inflorescences weighing 70-120 g are used as food. In their raw form, they taste like unripe walnuts, and salads are prepared from them. Artichokes are also fried, boiled and canned (but not frozen).
Valued for its high content of protein, vitamins, inulin (a sugar substitute for diabetes), magnesium and potassium. Regular consumption has a positive effect on the liver and prevents the development of atherosclerosis.
Sowing seedlings with stratified seeds in March. Seedlings are planted in open ground at the end of May according to a 70x70 cm pattern.
In the southern regions, the artichoke is cultivated as a perennial crop; for the winter, the rhizomes are hilled up and covered; in the middle zone, they are dug up and stored in basements vertically in wet sand.
