* Sun-dried tomatoes.
Dried tomatoes are very popular in Italy. This method of cooking maximizes the taste of tomatoes, making it exquisite. Dried tomatoes are added to salads, used as a filling for pies, or simply eaten with bread. For drying, use oval "cream" tomatoes and remove the pulp with seeds (but you can leave the pulp if you wish).

Tomatoes - 600 g.
Olive oil unrefined - 100 g.
Salt.
Sugar.
Dry rosemary.
Garlic - 2 cloves.
Cut fleshy tomatoes into quarters, remove the pulp with seeds. Put on a baking sheet with parchment. Lightly salt all the tomatoes. If the variety is not sweet, then lightly sprinkle with sugar. Put in an oven preheated to 130 degrees and leave for 6-8 hours. All moisture should come out of the tomato. Periodically open the oven door and release steam.

Pour a little olive oil into the prepared jar, add a few sprigs of rosemary and a couple of thin slices of garlic to the bottom. Lay out a layer of sun-dried tomatoes. Then again put rosemary and garlic and a layer of tomatoes. Fill the jar to the end and pour in the rest of the olive oil. Close the lid. Store 6 months. Tomatoes will be ready in 2 weeks.
